Roll the lemon cream


My neighbor brings me to Naples from his native land of fragrant lemon and I keep them a little by thinking of a recipe that enhances the flavor. A huge success, popular among the many Christmas cookies for her pleasantly acrid flavor that 'breaks' from the monotony of the usual sweet.

Ingredients: 6 eggs

275 g sugar 150 g starch


icing sugar to taste 120 g butter 2 large lemons
untreated

Preparation: Prepare a paste
beating 4 egg yolks with 75 gr. of sugar until a smooth cream, add 20 gr. melted butter, 125 gr. paper and the grated rind of a lemon.


Beat the egg whites until stiff and add 50 gr. sugar, mix this mixture with the above.

Cover a baking tray with baking paper, pour the mixture and cook for 10 minutes. Turn out and cool.

For the custard: Mix
150 gr. of sugar with a zest
the lemon rind, add 2 eggs and blend. Then add 1 tablespoon of diluted potato starch with the juice of 2 lemons.

Put this cream on the stove and bring to a boil, stirring constantly, then remove from heat and add 100 gr. butter cut into small pieces.

Pour this cream on the dough that you put aside and rolled up. Sprinkle with powdered sugar.
